Meet Xavier De Yparraguirre of Maison Marcel French Bakery in Lakeview

Today we’d like to introduce you to Xavier De Yparraguirre.

Xavier, please share your story with us. How did you get to where you are today?
I have experience with different restaurants in Paris and decided it was the right time to challenge myself. I wanted to bring my passion for food to America and introduce a fresh French bakery concept to the people of Chicago.

We’re always bombarded by how great it is to pursue your passion, etc – but we’ve spoken with enough people to know that it’s not always easy. Overall, would you say things have been easy for you?
There are always new challenges when moving to a different city and starting a business from scratch. The most interesting part has been adapting my idea of French cuisine to suit the American palate. I wanted to create a bakery and dining experience that would be fresh and appealing to Chicagoans.

We’d love to hear more about your business.
We take pride in providing fresh handmade pastries each day. A core design of Maison Marcel was to have an open bakery atmosphere where customers can see their baked goods being created from scratch. Our French baker, Arnaud Brochard, creates pastries using traditional techniques. He is always looking for new ways to appeal to the American palate. We also make an honest effort to ensure our bakery ingredients are a close match in terms of quality to what is used in France.

What were you like growing up?
I was very social and felt like there were unlimited opportunities.
