Today we’d like to introduce you to Paco Ruiz.
Thanks for sharing your story with us Paco. So, let’s start at the beginning and we can move on from there.
As a cancer survivor I decided to focus more on healthy eating, but I still wanted to utilize my creative skills. So I enrolled in a culinary school that was well known as one of the top culinary schools in the country located in Evanston IL. Kendall College. I worked in well know hotels, also abroad, Italy and Mexico.
My first restaurant I opened in 2006 it was an Italian restaurant located in Bridgeport. I continue to open more restaurants of different cuisines, a total of ten. Currently bullhead cantina has been operating for six years and it’s a very well know whiskey and taco bar.
Has it been a smooth road?
Hiring the right people to perform up to my expectations. Being on time, work in a timely manner, and be responsible for their own actions!
So let’s switch gears a bit and go into the Bullhead cantina story. Tell us more about the business.
I am the creator of my food menu! I create all my dishes that are on the menu and what set me apart I will say that I am one of the trend setters of creating craft tacos, such as, Handmade tortillas, making not your typical tacos, veggie options, and of course my famous kale and grits taco that has been featured in many articles and tv show.
How do you think the industry will change over the next decade?
The food industry will continue to grow and the taco trend will be more popular than ever.
