Today we’d like to introduce you to Jason Noel.
Jason, please share your story with us. How did you get to where you are today?
Well, it started with my upbringing of an Italian mother and grandmother, moved forward with cooking at age 15 starting as a prep cook in an Italian kitchen. Went to CHIC culinary school and worked at House of Blues Chicago and New Orleans.
Soon after I did an internship in Brazil for 90 days and ended up staying 2 years. There I cooked in different regions of South America. I was recently at a place named Square Bar and Grill in Avondale. I was featured on Chicago’s best and won the Viewer’s Choice Award. I also did some work with the Travel Channel on a show called Food Paradise. I decided to do my own thing and bring my expertise and experience to Lincoln Park and opened up Devour312 in October.
Overall, has it been relatively smooth? If not, what were some of the struggles along the way?
No, it has not, it was a hard climb to the top to have the position I do. The industry is very tough on your body and the hours take you away from your loved ones. You must have a passion for what you do and respect the industry or it will make your goals even that more difficult. The pay always hasn’t been the best for the hard work you put in but you just need to stick with it an earn your respect in the kitchen.
Please tell us about Devour 312.
Devour312 is a neighborhood friendly restaurant that has a laid-back atmosphere with great 90’s hip-hop and reggae music. We make everything fresh and put love and time into our food and cocktails. I create dishes from past work or travel experiences that inspired me. I keep up with trends in the industry and I also push the envelope to try and create new and funky dishes. Devour312 has great service, drinks, and craft beer.
If you had to go back in time and start over, would you have done anything differently?
Nothing much. I lived, I learned, and I saw a lot which made me the man I am today.
