
Today we’d like to introduce you to Greg Dix.
Greg, let’s start with your story. We’d love to hear how you got started and how the journey has been so far.
As I was working my way through the Culinary program at Washburn Trade School, I was hired by the previous owner over 30 years ago. I worked at Swanson’s Deli until I graduated and took a job with Hyatt Hotels. I was hired on as an opening culinary staff member for, what used to be, the Hyatt Regency Suites on North Michigan Ave. The commute got old quickly and parking was too expensive.
I then started work for the Walt Disney World Company in Florida & worked at Chef Mickey’s, 50’s Prime Time Cafe and wound up at the Grand Floridian Hotel’s Convention Center for the majority of my 6-year employment.
I realized I missed Chicago, my family & friends so I started looking for work back here. I was rehired at Hyatt Hotels and worked at the Hyatt Oakbrook as the Executive Sous Chef. Once I got back home my career flourished and moved on as an Executive Chef for Zum Deuchen Eck, Founders Hill Brewing Company, 115 Bourbon Street, Spago, Wolfgang Puck Catering & Events and Sheraton Chicago Hotel & Towers.
When I found out Swanson’s Deli was for sale I returned to work for the same previous owner, 30 years later, with the understanding that I indent to purchase the business.

Swanson’s Deli has been around for approximately 75 years. We still use all of the original recipes to this day! We specialize in handcrafted food made from scratch in our deli and in our catering. No preservatives & no pre-packaged foods.
We make our own stocks, sauces & soup from scratch as well.
Swanson’s is famous for our potato salad, chicken salad & most importantly our famous Cheese Ball!
