Meet Gianluca Pesce of Yolk in South/West Loop, Streeterville, River North, Marina City, Wicker Park, Bucktown and Lakeview

Today we’d like to introduce you to Gianluca Pesce.

Gianluca, let’s start with your story. We’d love to hear how you got started and how the journey has been so far.
Yolk was started by Taki Kastanis in 2006 with the first location in Chicago’s South Loop neighborhood. Since then, we have expanded to 8 locations in Chicago, 3 in Indianapolis, 2 in Dallas and 1 in Fort Worth. This year, we will also open our first Florida location in Boca Raton!

We believe our success stems from great food, unique dishes and fantastic service all delivered to you with a smile. That’s the Yolk experience. And it’s been that way since when Taki Kastanis founded his first Yolk in Chicago with innovative food and a great customer experience in mind. Today, Yolk is still delivering unique and innovative dishes to thousands and thousands of loyal customers each week.

Overall, has it been relatively smooth? If not, what were some of the struggles along the way?
I think if you speak to any restaurant owner they will tell you its never easy and starting a restaurant is very hard work. Taki has dedicated a lot of his own time to make sure every customer was taken care of from day one and now we are extremely fortunate to apart of a brand that people have come to know and love all over the country.

Please tell us about Yolk.
Yolk is best known for brunch. We serve around 5 million eggs a year and that number continues to increase every year. We have savory options like our classic Eggs Benedict, Chicken ‘n’ Waffles or our Corned Beef Hash & Eggs. If you are a sweet breakfast fan you will love out Red Velvet French Toast or Nutella Crepes.

What sets us apart from the competition is quality and consistency. You can go to any Yolk and get the same great food and service. We also have such an amazing team that helps make Yolk what it is… I am very proud of that for sure.

If you had to go back in time and start over, would you have done anything differently?
Speaking personally… I wouldn’t change anything. Going from 1 store to 14 stores has taught us all so much. It’s a journey that will continue to evolve our business into something better than what it is today.
