Chris, let’s start with your story. We’d love to hear how you got started and how the journey has been so far.
I’ve always had a love for food but BBQ in particular was a passion and owning a food truck had been a dream of mine for a long time. After graduating from culinary arts school in 2007, I continued to perfect my skills catering events for family and friends. As my family & friends raved about every dish I served, I knew it was time to share my food with the world.
Has it been a smooth road?
With all the support CJ’s BBQ Cruiser has received since it’s opening in March we have been fortunate enough to have experienced a fairly smooth road thus far. Right now, we are focused on learning what our customer wants so we can provide the best BBQ menu possible.
So, let’s switch gears a bit and go into the CJ’s BBQ Cruiser story. Tell us more about the business.
I’m a Pitmaster, known by my family and friends for my BBQ ribs and sauce.
What sets me apart is the care that I have for creating delicious foods. I’m a believer in heavy flavor, which is why I have focused on creating the perfect marinade and rubs for my BBQ.
I’ve admired seeing food trucks, especially in the city of Chicago! It’s now a dream come true to have a food truck of my own.
How do you think the industry will change over the next decade?
I believe food trucks are a great stepping stone for chefs who are planning to open a restaurant of their own.
