Meet Nicole Triebe of Windy City Dinner Fairy in Portage Park

Today we’d like to introduce you to Nicole Triebe.

Cake artist Nicole, serves as owner and head chef of Windy City Dinner Fairy. She’s a graduate of Cooking and Hospitality School of Chicago, but originally beginning her career as a Paralegal, Nicole ultimately followed her passion for food and took her personal and professional dreams in another direction.

In 2004, Nicole graduated at the top class and obtained a degree in Pâtisserie Arts. Though well-versed in all areas of cuisine, Nicole realized that her true passion was in the creation of beautiful cakes. In 2010, she started her company, Windy City Dinner Fairy in Chicago. The dinner fairy served as a catering company prior to establishing herself as a cake artist in 2014. Today, Nicole focuses exclusively on custom cake creations. Her sweet creations have garnered Nicole notoriety as the “best themed cakes in Chicago.”

She has been featured on Windy City Live, worked with Protein Bar as their Super Spice Girl, recently hosted a cupcake decorating class at Macy’s on State Street, and has had her recipes featured on Huffington Post, The FeedFeed and countless other websites and magazines.

Nicole’s cakes are currently available through private ordering.

Great, so let’s dig a little deeper into the story – has it been an easy path overall and if not, what were the challenges you’ve had to overcome?
I started out as a personal chef, hence the name “Dinner Fairy,” but ultimately ended up in pastries. I currently still working through some branding issues, but overall, I love to create beautiful food and pastries. After all, we eat with our eyes first, right?

Windy City Dinner Fairy – what should we know? What do you guys do best? What sets you apart from the competition?
There are a few different facets to my business. The main component of Windy City Dinner Fairy is a custom cake business, but it doesn’t end there. Overall, I love to create beautiful food and a beautiful experience for each client. That includes gorgeous cakes, food styling, and photography.

What moment in your career do you look back most fondly on?
My class at Macy’s. It was my first class, and had such an amazing turn out (and even had a wait list!). It was so much fun to be in front of a large group of people teaching my craft.
