Today we’d like to introduce you to Jay Schuster.
Jay, please share your story with us. How did you get to where you are today?
I moved to Chicago after graduating college and got a job waiting tables as I was preparing for grad school, and realized that I loved the hospitality industry. Obviously, there is a certain attraction to the high energy, the food, the wine; but the connection with people is the most compelling aspect. The ability to help guide people through an experience that can often lead to a lifelong memory is incredibly satisfying. I’ve been fortunate to have been able to work at a number of incredible restaurants, and have met so many amazing people as guests, vendors, and colleagues.
Has it been a smooth road?
Like anything in life, there have been challenges and obstacles, but the beauty of running restaurants is that once the doors open for business, nothing else matters except delivering the best possible experience to all of our guests.
So, as you know, we’re impressed with RM Champagne Salon – tell our readers more, for example what you’re most proud of as a company and what sets you apart from others.
RM Champagne Salon opened nearly 5 years ago, and we have always strived to be a beautiful venue, but very approachable. We have been fortunately to see the West Loop neighborhood develop over the years and are excited to be a part of such a bustling part of the city. Obviously, champagne is a specialty of ours, but we have so many sparkling wines from around the globe, a great cocktail program, and what I feel is the best space in the city. A cozy room with a beautiful fireplace during the winter that opens up to a gorgeous cobble stoned court yard during the summer.
Let’s touch on your thoughts about our city – what do you like the most and least?
My favorite part of Chicago is the people! Chicago is truly a global city with residents and visitors from all over the world, but being located in the Midwest, there is a warmth and authenticity to people that make Chicago home that creates such a friendly and approachable environment.
My least favorite part of Chicago is the long, cold winters. Everybody lied to me when I moved here that I would get use to the winters. On the bright side, I feel if the weather were perfect, Chicago would be twice as big and lose the genuine connections between people.
