Today we’d like to introduce you to Mark Domitrovich.
Mark, please share your story with us. How did you get to where you are today?
Pioneer Tavern Group started in 2002 when I jumped at the opportunity to buy Bucktown neighborhood institution, Lottie’s Pub. Shortly after in 2010, I purchased what is now The Pony Inn in Lakeview. And, in 2010, Frontier was opened in West Town, as our first food-focused concept.
Overall, has it been relatively smooth? If not, what were some of the struggles along the way?
I think many entrepreneurs would say that while incredibly exciting, it’s not always a smooth road starting a new venture. I would say the biggest challenge I have as an entrepreneur and business owner is to continue evolving and reinventing as the business world continues to change.
Please tell us about Frontier.
Our goal at Frontier is to take guests out of their comfort zone. We want to give everyone an experience that can’t be found anywhere else in the city. We specialize in Whole Animal and wild game, from Boar to Pig to Alligator, we do it all. We want our guests to live a little and try new things they never thought they would!
Our executive chef, Brian Jupiter, was born and raised in New Orleans, Louisiana and has always gone back to his southern roots for inspiration. He combines family secrets and the comfort of home cooking with the excitement of unique proteins to give guests a taste of eating and drinking on the edge of civilization.
If you had to go back in time and start over, would you have done anything differently?
I don’t think I would do anything differently. All the struggles and mistakes along the way have only helped me grow.
