Today we’d like to introduce you to Julio Cano.
So, before we jump into specific questions about the business, why don’t you give us some details about you and your story.
A Toda Madre (ATM) was the second of five different concepts we’ve created so far under Bien Trucha Group (www.bientruchagroup.com); two of them opening in the first quarter of 2018.
We approach each of our creations as a unique opportunity to learn, invent, evolve and have fun doing what we love and are passionate about, which is creating experiences in spaces where people can enjoy great food and drinks in a cool atmosphere.
When we decided to do ATM back in 2012, we had the opportunity to open a second location of our first restaurant, Bien Trucha, which could’ve been the easier choice due to its great popularity or do a new concept… we opted for the latter. Up to this day we are still asked why don’t we just do tons of Bien Truchas or ATMs; the answer is simple… we approach each space as an empty canvas to showcase the creativity of every member of our team.
Great, so let’s dig a little deeper into the story – has it been an easy path overall and if not, what were the challenges you’ve had to overcome?
Our main obstacle was the constant comparison to Bien Trucha, but little by little people realized that ATM was as good in its own unique way.
A Toda Madre – what should we know? What do you guys do best? What sets you apart from the competition?
We put a great deal of passion and dedication in everything that we do. We work as a team and that is what we believe has made us successful. If we are creating a new dish or drink, there is always a group of us that try it and gives feedback.
At ATM we also work with the highest and freshest quality products available; nothing frozen or canned.
What moment in your career do you look back most fondly on?
I wouldn’t single out one specific moment. What makes us the proudest is to see the evolution of growing from a 4 tables restaurant into what this group is today, and of course, the constant recognition and compliments we receive on a daily basis when you are able to meet the expectations of your customers.
