Today we’d like to introduce you to Maxine Barton.
Maxine, please share your story with us. How did you get to where you are today?
Lola’s was started as a vision of Bruce Barton’s. Bruce studied hospitality and culinary at University of Las Vegas. He worked at several pizza places and managed Bill’s pizza in Mundelein. The true dream was to open his own restaurant combing his own recipes, along with his vision of customer service. About 3 years ago this vision became reality and today we are serving the freshest homemade food in a cute cozy environment in Prospect Heights.
Has it been a smooth road?
There are many struggles with opening a new restaurant, the biggest struggle is getting known in the community and trying to get customers to try your product. Customer loyalty in our area to their favorite pizza place has been challenging, we still to this day have many people coming in for the very first time and we have been here almost 3 years. The other biggest challenge is competitors trying to Sabotage our existence, which is crazy because we can all succeed.
So, as you know, we’re impressed with Lola’s pizza palace – tell our readers more, for example what you’re most proud of as a company and what sets you apart from others.
We are known for our pizza as well as our garlic knots and Italian beef. We have our own homemade signature crusts including our in house developed beer crust. We make our own Italian beef and sausage as well. We are proud of the labor intense detail that goes into making our product. Everything is made fresh and a lot of our food is locally sourced. I think the amount of fresh food we go sets us apart from other pizza restaurants.
Let’s touch on your thoughts about our city – what do you like the most and least?
We are in a wonderful city in Prospect Heights. We have a wonderful mayor and governing body. The city is small and there are not a ton of businesses in the area. What is hard for us is that we sit in a rather quiet strip mall that is hidden from any vicinity of main roads. Our strip mall does not bring in many diners.
