Today we’d like to introduce you to Hayley Shine.
Hayley, can you briefly walk us through your story – how you started and how you got to where you are today.
I joined the Eris team in early 2017 during the lengthy transformation journey from a former Masonic temple originally built in 1910 to a brewery, cidery, pub and restaurant in Chicago’s Old Irving Park neighborhood. We opened our doors in early February! As Lady of Liquid, I am responsible for all aspects of cider and beer production.
I am a longtime professional brewer and new to the art of cider making. I brewed at Rock Bottom Brewery for over a decade, beginning in the Pacific Northwest and most recently here in Chicago at the River North location. My love for brewing started with homebrew in my college days, studying Bioengineering at UC Berkeley.
Has it been a smooth road?
Eris is a spectacular undertaking. Crafting cider and beer under one roof with a bar and restaurant is quite a bit to do. Owners Katy Pizza and Michelle Foik are ambitious and determined women. As for the Department of Liquids, commissioning the brewery and cidery simultaneously and single-handedly was perhaps the biggest challenge I have faced yet.

There are a lot of breweries in Chicago. I think crafting cider as well really sets Eris apart. There seems to be a lot of excitement about cider right now and our modern cider blends have been really well received.
